Stir Fry

This easy, weeknight recipe is a great way to bond with your child while teaching them the importance of nutrition and kitchen safety.

Ingredients

Stir Fry Sauce:
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon cornstarch
  • 1 teaspoon sesame oil
  • 1/2 teaspoon minced garlic
  • 1/2 teaspoon minced ginger

 

Stir Fry:
  • 2 boneless, skinless chicken breasts, thinly sliced
  • 2 tablespoons vegetable oil
  • 2 cups mixed vegetables (e.g., bell peppers, broccoli, snap peas, carrots), chopped
    • Frozen mixed vegetables can be used as a quicker option.
  • 1 cup sliced mushrooms
  • 1 cup snow peas, ends trimmed
    • Stir fry can be an imaginative dish. You can allow your child to pick their favorite vegetables to mix into the stir fry!
  • Cooked rice or stir-fry rice noodles for serving

 

Instructions

  1. Prepare the Stir-Fry Sauce:
    • In a small bowl, whisk together the soy sauce, honey, rice vinegar, cornstarch, sesame oil, minced garlic, and minced ginger. Set aside.
    • You can have your child measure out the sauce ingredients and stir them together.
  2. Prep the Ingredients:
    • If your child is old enough, they can help wash and chop the vegetables with supervision. Ensure they use age-appropriate knives or kitchen scissors for safety.
  3. Cook the Chicken:
    • Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat.
    • Add the sliced chicken and fry until cooked through and no longer pink. Remove the chicken from the skillet and set it aside.
  4. Cook the Vegetables:
    • Add the remaining 1 tablespoon of vegetable oil to the skillet.
    • Add the chopped vegetables and sliced mushrooms to the skillet. Cook for about 3-4 minutes until they start to become tender but are still crisp.
  5. Combine and Finish:
    • Return the cooked chicken to the skillet with the vegetables.
    • Pour the stir-fry sauce over the chicken and vegetables.
    • Add the snow peas and continue to cook for an additional 2-3 minutes until the sauce thickens and the snow peas are tender.
  6. Serve:
    • Serve the chicken and vegetable stir fry over cooked rice or stir-fry rice noodles.

 

Along with washing, measuring, and stirring, you can also help your child to help set the the table with plates, utensils, and napkins.
